Repost for anyone interested in curing and fermenting venison summer sausage

Use a culture (I used F-RM-52) - not Fermento

Basically, you don't HAVE to ferment if you cure summer sausage - this is an unusual recipe for that reason, but the additional taste you get is well worth the effort!
