First Turkey and First Fatty with Q-View

Hello everyone! Hope everyone had a good turkey day last week! All good down here. I decided to do my first Turkey and Fatty all in one day.

I got a minimally processed turkey

Decided to make a homemade brine which consisted of salt, sugar, pepper, herbs, molasses, and some other random spices. I bagged it over night. FYI use a bigger bag than a 3 gallon unless you want a mess!

Thanksgiving morning we got the fatty ready. Girlfriend made a nice bacon weave while i lit the smoker. We sautéed some green and red bell peppers, a jalapeño pepper, white and green onion, and scrambled 3 eggs (i think i will do four next time). Plus we chunked up a good bit of chedder and threw that on top. Oh yeah i used 2 lbs of sausage so i guess this might be properly called a hog leg and not a normal fatty! biggrin.gif

Here is a pic of the finished fatty or hog leg with my fathers hand trying to pick at the bacon!

Smoked bird over higher heat about 325-350 for about 4 hours till breast reach 170. Wish i woulda pulled it at 165 but it was still the best turkey ive ever had. Still making some yummy sammies!

Man oh man thats some fabulous looking turkey for sure there Matt. Your fattie looks great and when i saw that weave I thought you were wrapping the bird some that was one huge fattie. I bet it took a whole box of matches to light that one. I have to give you some points.giffor the bird and the Fattie both came out great

thanks for all the comments guys! honestly though if it wasnt for everyone here, there is no way I coulda pulled this off. Thanks to everyone who posts all the good info. mballi3011 you have shared some great knowledge on here for sure!

next up for me to conquer is the beef brisket! looking forward to that one.

Nice lookin turkey and fatty. It's hard to eat one from an oven after having a smoked bird. My kids groan when we have one now that is not smoked.
