I didn't get up in time to get my fatty in the smoker when I had planned. it has been smoking for two hours, I have an hour till we leave. Can I put it in the oven or something? The bacon still looks completely raw!

Yep, oven at 350F for 30min or an internal temp of 150F, would depend on your stuffings.

Or if you can crank up the smoker...it does not have to stay at 225 or so. good luck

Your internal needs to be 160. If you check it and it is.... and the bacon isn't crisp.... take it out and put it under the broiler in the oven to crisp up the bacon. I've found brands that will crisp up nicely and some that just won't do it in the smoker. You can also take it out and wrap it up... take it where your goin and finish it up there if you have an oven or a grill to crisp it up. Usually 2 to 2.5 hours is plenty of time to get the internal to 160. If your close... crank it up.

I would crank up the smoker if you can and see what happens. If you cann't get it to temp then wrap it up in some heavy foil and then go and put it into the oven to finish there. Don't forget the Qview.
