Wow. What a site you folks have assembled. I have been lurking here for a few months and finally registered.
I have been grilling for several years. I grew up in Western Kentucky where Mutton is the BBQ. My first dealing with a smoker involved a R2D2 (a prototype ECB???) looking rig with a water pan. I have used Webers and small gassers to the point where nobody wanted them as a hand-me-down and worn out a Captn' Cook 5 burner gasser while living on Oahu (every day was a good day to grill). My current rig is a Char Griller Duo with a side fire box (SFB). Not perfect, but very handy with a side burner, three burner gas grill, charcoal grill and SFB for smoking.
I also built a UDS and have orders to build three more...
What I want to learn from this site is THE FATTY...
I have seen them, read about them, but have yet to make one. My wife just got back form the store with SAUSAGE!!! I gotta go!
