So, I picked up a turkey last thursday from Costco - wanted to pick it up early to get a good choice of bird. It's a fresh 21 pound butterball. Last night I started thinking of how long it would last in the refrigerator (37 degrees).

On the usda site they list that a fresh turkey should only be refrigerated for 1-2 days - by the time I cook this thing, it's going to be 6 in the fridge before cook time and I'm obviously a bit weary of getting people sick.

I guess my question is - would you cook this bird under these conditions?

Yes.
If you brine it, the salt will prohibit bacterial growth and you can stretch it out another couple days without worrying.
