Been a while since I posted anything - still lurking like crazy but feel it is my turn to contribute. Smoking for tonights game - Spare Ribs and Dutch's Famous Beans. I am not allowed to attend a function without bring these beans - Thanks Dutch!

Not many pictures of the ribs yet - but everything is in the smoker. Using an ECB at 235 right now. TBS is flowing and the neighbor has been over twice trying to talk me into opening the lid - Nope - Not gonna do it!

After an hour and forty five minutes. I will be using the 3-2-1 method. The particle board is my version of a windbreak and seems to work well. I have the smoker in an unused dog kennel that is covered and with the particle board it stays pretty well sheltered from the wind.

In the second picture, notice the strip bacon on the top of the beans, I am trying this as extra bacon fat goes with everything. <GRIN>

O U isn't that how the word OUCH starts and how your team felt in Lincoln... All kidding aside - our team needs help and it would have been different with Bradford in the game. Back to food discussions....

Your ribs look good and the beans are really good as long as you do it the same way dutch says to. Now as far as your quarter back sam Bradford I think he's just suffering for the Tebow curse. GO GATORS. Good luck in the gamePDT_Armataz_01_34.gif

Well - the beans are done and look great! The ribs are out of the foil and smell inf'ingcredible. One hour to kick off and the ribs are back in the smoker for awhile then foil and cooler for the short drive to the big screen. Oh - Yeah, I'll be a hero again! Thanks to you all for the words of wisdom and knowledge.

Your ribs and beans look WAY better than the Huskers offense looked last night! At least the Blackshirts came through again. Great job on the food, I'm sure you were the favorite guest!

what did you put in those beans?

Ribs are looking good, and you can't go wrong with Dutch's beans. All in all, a winning combo.

Well - I was the MAN when it came to the food. In response to Miamirick, I had a couple left over strips of bacon that I just laid on top for extra bacon flavor. I'm not sure if I would do it again, it didn't really add that much but didn't hurt either.

Our offense had a couple moments where they looked OK and then back to drive after drive of mediocrity.

Since it all worked so well yesterday, I'm anxious to jump back into the smoke today but the honey do list will probably prevent that...<sigh>
