Hello - This is truly an outstanding site!
I have done well thus far smoking locally caught fish (mostly mullet and amberjack). Smoked fish spread is now a staple in my home! I look foward to mastering other items.
We are very close to completing a family project of sorts - we are converting two 55 gal drums into a double barrelled smoker. We basically are following the directions on this site:

It should be holding multiple birds come Thanksgiving...
