Name is Chris - still learning at this point. I have smoked quite a bit of fish thus far (mullet and amberjack), but not much else. Smoked fish spread is a bit of a staple at my house. We are at the tail end of a family project of sorts - converting two 55 gal drums into a large smoker, generally following guidelines shown at this site:

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

welcome fellow Floridian. May I suggest you start a post and keep us updated on your project and provide pictures? some of these guys are BBQ engineers and they'll assist you along the way if you let them.
