hi All,

I am writing from Minnesota. Over the summer, my father and I tried to make a smoker out of a 55 gallon drum (smoke chamber), a 35 gallon drum (fire chamber) and some old stovepipe we had laying around. It was a pretty slick looking unit, and we used it to successfully destroy about 20 lbs of venison sausage.

I decided to give it another shot and actually learn about the art of smoking instead of reading a recipe and just winging it. And what better way than by asking the folks who probably have walked the same path as i am now to try and gain some perspective.

I am currently starting over and I am using a Little Chief to learn about smoking with a more consistent heat source than fire. I may try the monster smoker creation again someday soon, but not until i learn how to churn out some good stuff with the little chief.

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Welcome Rhino, Don't throw that creation out just yet. With all the knowledge that exsists in these forums, you might find that you built something great and all it needs is just a tweat here or there.

Hello fellow minnesotans!!! I am from the southern burbs of the twin cities, an implant from wisconsin. Between in-state deer hunting the next few weeks, and out of state hunting back home the week following that, I hope to learn some strategies for making venison summer sausage to use up the stuff we still have frozen from last year.

zjaybird, I won't get rid of it, because I know for a fact that the way it sits now, it would be excellent for making brisket or ribs in more of a hot smoker/BBQ/cooker capacity. In just looking around these boards and a few other designs for offset fire chamber style smokehouses, I already know what the problem is for cold smoking. we've only got about a three foot section of stovepipe between the fire chamber and the smoke chamber. we put a damper in the pipe between the two, and one on the stack out of the smoke chamber, thinking that we'd be able to control the heat that way. looks like the first thing we need is a longer piece of stovepipe between the two chambers, so the smoke can cool down a bit and give us more control over temperature fluctuations. And I see from some other articles that our fire was WAAAAAY too big to begin.

First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
