Well Sunday's the big day. I'm doing 15 baby back ribs and wanted to make sure I got all the information I needed before I screw something up!! I'm using Jeff's rub and Jeff's sauce and am going after "falling off the bone" ribs.

I'm thinking about using the 2-2-1 method but had a couple of questions..

How much apple juice should I add when foiling and meat side down or meat side up?

Is 2-2-1 the method to go for when trying to get falling off the bone baby back ribs??

Oh I'm using a GOSM Big Block for this fyi
 
If I foil, I splash apple juice or Dr. Pepper into the foil pack before sealing it. It doesn't take much to create the moisture you're looking for.
 
I find that it depends on the meat. But for me the fall off the one rib takes 2-4-2 but I have had swift products that work on 2-2-1
 
Well Bernie, here is how I do it. I try not to have them fall off the bone myself, but pull off easy and a clean bone that dries white.

I use a stickburner, but your GOSM should do just fine. 15 racks seems to be alot for that rig. here is 16 racks in my mobile stickburner!

I use the 3-1.5-1 for these, if I wanted them to fall off the bone, I would probably do 3-2-.5. I actually rub thes with a little bit of margarine on both sides, and lay in the foil meat side down, and spray with apple juice heavily( 6-7 sprays), and close it up tight, one rack at a time. I don't take them out of the foil until, i can feel them bend easily in the middle of the rack. Flip em out of the foil gently( meat side up) or they will break in half.Run them for another 30-40 minutes and mopp or spray at the 15 minute mark. They should look something like this.



this is the time to add sauce if you want to, I usually don't and these had no sauce either. Put them in a pan( 4-5 racks per pan) and cover loosely with foil and let rest for 10-20 min.

2-2-1 for BB and it doesnt take but very little moisture. I use just a little apple juice with a little rum and meat side down and I try to spread them out a little. i use shallow roasting pans and just put 6-8 racks in a pan and then foil on top...Works great and easier than usiing all foil to me.....I will be looking for some queu view
