looking for waterfowl tips

new here, searching the web for different brines to soak ducks/geese in before smoking.

i currently have a hand-me down brinkman gourmet electric smoker. i need to upgrade.

any advice or direction appreciated

First off, welcome to our site. Lots of good people here, and several hunters that can help you with your wild game questions. Unfortunately, I am not a serious waterfowler. Pretty much stick to critters with 4 legs, but pheasants are always welcome on my plate LOL. I'm sure someone will chime in here with some tips for you, but maybe take a look at the brine recipe on the front page of this site for Turkey. I'm sure it would make a great brine for fowl. If you do smoke a bird, try to take some photos for us and your method of preparing it and share it with the rest of us.

An oldie but a goodie:

Wood plank waterfowl.

Take the duck/goose and season with just salt and pepper.
Start your fire.
Lightly oil a cedar plank of wood (or other wood of your preference).
Grill over medium coals for 15 minutes.

Lastly, remove the meat and EAT the WOODEN PLANK biggrin.gif

Seriously, I know a lot of folks that like to use Asian flavors (soy, teriyaki, ginger, etc.) with waterfowl.
