1am pulled pork...Qview

Beautifull shores of Lake Superior
Did a couple of boston butts yesterday. It was a cool 46 degrees for a high here so things took some time. I put them on the smoker at 10am and pulled at 1am this morning. Well worth the wait though. Had I babysat the smoker more I think they would have been done sooner but I have been doing a a garage remodel and was distracted with other things. The smoker temp probably averaged around 220.

Rubbed up and ready.


Done smokin' and out of the cooler ready to be pulled. The bark on this was fantastic. I did not use mustard prior to rub spritzed with apple juice and orange Bacardi O mix. The rub was Jeffs.


There was really no pulling involved. These just fell apart. I bought those hard plastic "salad hands" at Wally. I would just poke the roast with them and it would fall apart. Didn't even need to seperate the fat it just melted.
Didn't turn out mushy either.

Added a squirt or two of finishing sauce... Was carefull not to over do it...

This is the second roast. I did two. Never even touched this one with the salad hands. It came apart like this after just pulling the bone out.


And finally a 1am sammy. Ok I had two. On a Kaiser roll with Curleys Hickory sauce. Thanks Rivet!!


I used mesquite for the smoke flavor and a little red oak. This was my very first attempt at pulled pork. Couldn't have asked for much better results.
Next up. Honey/Chipolte baby backs. And Buffalo Redeye chili. Stay tuned

Looks great, sounds exactly like my smoke on Sunday except I started at 9:00am. But like you said well worth the wait!

Thanks Rivet. The mods are fantastic. Had a little running around of temps on the firebox end at first. Once things got really heated up the firebox end settled down and ran around 18 to 20 degrees higher than the exhaust end. Everytime I would stoke the firebox with more fuel I would get a intial spike at the firebox end. Don't think that can be avoided. Just going to have to be carefull when I smoke something on that end.
Man that manifold really holds the heat in the smoker. Just the trick for a cooler day like yesterday.
