Hey Folks,

Just found the site and man do I need help!! I just bought a Chargrill gas/char/smoker combination. I have never smoked anything before and I would really like any help you folks could provide. I have about 35 head of buffalo and I'm getting ready to buy about 10 head of cattle to compliment my farm. Tried to smoke a roast and when I got done with it you could of used it as a weapon!! Not a very good first attempt. Our farm is in Hickory NC. Thanks for all your help in advance. Jon

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Pick a meat that you want to smoke then go to that forum and get some ideas and see what other have done and how they did it.

Bison is a very lean meat and will dry out quickly. Most folks that do bison don't cook/smoke much above medium rare. Another tip to have a moister product is to place bacon strips across the top.

First off welcome Jon to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anything to do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.
Here's a link to photobucket it's free and easy to download pictures. Then if your really new to smoking Look up the E-course.
It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Welcome to the forum. Just like everyone has mentioned, pick a meat, then look for a forum section ie, beef, pork, fish. If you want something simple to start with I would suggest a fatty.
