Ok not real sure if this is a original family recipe or if they altered it from a different one. but it is great and you can add corn or japs to it also. My whole family loves this stuff and it is also a good recipe for the end of garden what do i do with all this stuff recipe..lol
Grind and set over night
10 cups zucchini
2 cups onion
5 tsp salt
Next day-drain and set aside
in a large pan mix and bring to a rolling boil:
2 1/2 cups vinegar (I like apple cider)
3 cups sugar
1 tsp dry mustard
1 tsp turmeric
1 tsp cornstarch
2 tsp celery seed or salt
3/4 tsp nutmeg
1/2 tsp black pepper ( I put more)

This is your choice how much on the next 2 items (we normally do finely chopped carrots about a cup. and 1 cup of either green or red bell peppers.(this is were you could add the corn or japs also)

throw everything in to the rolling boil and cook for 30 minutes. then process jars as you wish.
this stuff is great on alot of things.
 
Looks good from here the wife is going to try to make something like it that with zucchini.
