Hi Everyone,

I'm new here. New to smoking. In fact, just got my first smoker for my birthday. It's a 30" MES. I'm so excited and looking forward to getting started smoking. Here's the rub, though. I'm going to be gone for a week. Ugh. All I'm going to think about is getting back and trying out my new smoker.

Can't decide if I want to do a Boston Butt or some ribs first. Question on the ribs. I like beef ribs over pork ribs. Does a 3-2-1 method work on beef ribs or is there a better method. Do I still look for about 1/2" pullback on beef ribs before wrapping in tinfoil?

Welcome to SMF !!!
Quit a few MES owners here ( I have a 40" and a 30"), so alot of experience with trouble shooting and modifications.

I vote for pulled pork as a first smoke, it will let you get to know your smoker and pork butts are very forgiving, so you should have great succes with your first smoke.

Remember to do a dry run and season your smoker before its first smoke.

First off welcome TeeRoy to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anythignto do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.

Welcome Teeroy! I have a 40" MES and love it. I agree with MossyMo in that you should try a pork butt first and then try ribs when you know how to control your heat. You will love your new smoker!!! Good luck!
 
Welcome Roy and congrats on your new smoker.
I agree you should give pulled pork a try for your first go, so delicious and leaves a lot of room for some simple mistakes.
May I suggest you consider tossing a fattie on as well?

Welcome and Happy Birthday. I had a cheap smoker that died and got me an electric (different brand) for my birthday and boy do I love it

Hi, thanks for the nice words and encouragement everyone. Funny dog story!!!

I was out of town this week but got back today and fired up the MES for the preseason. I soaked the wood chips for a good 45 minutes but I noticed that they still flared up a little causing a lot of smoke for 10 minutes or so. Does that happen pretty much every time and is it best to wait to put the meat in until after this?

Looks like another new design. The rack's are cross meshed and the burner/chip tray looks elavated more than previous models. Other MES owners reply with your thoughts please.

Teeroy, She's a beauty!... I have the same one, but forgot what it looked like when I brought her home. I'm almost embarassed to take a picture of it now...

But she has served me well & is nearly 2 years old, even though a minor repair had to be performed about a year ago. Fear not, it's a good unit & use that baby!
 
Mine will NEVER look like that again, have fun with it.
