Chicken/Turkey Summersausage

Has anyone ever made smoked/cured turkey,or chicken summersausage? Is it possible?

I assume you would make it with pork. If you have tried this let me know. Even if you havent or know if it can be done, please chime in.

I know that there are a lot of poultry sausages out there but not sure if you can make the bigger diameter sausages out of poultry most poultry sausages are fresh sausages that i have seen but i dont look very hard you might check len poli's site for recipes here is the link

I've seen, made & eaten chicken & turkey sausage in the smaller diameters both fresh & cured/smoked, but never in the "summer sausage" size. Not sure about this one.

I wouldn't know why you couldn't as long as you made sure it was in the safe temp ranges & properly cured when processing...

They make Turkey & Chicken Bologna & Salami...

I have heard of it and even eatin it but I have never made it but maybe soon I will start making sausage cause I really do want to.PDT_Armataz_01_37.gif
