I just found this forum and registered immediately. Why? I bought a Perfect Flame gas smoker from the local Lowe's a few weeks ago ($119.00) and tI am rying to learn how to use it. Since there were no real instructions or recipes with the smoker, I did a search and found this forum. BINGO! Just what I was looking for.

Me? I love to eat and enjoy smoked meats. I love Lexington style BBQ, I am a charter member of the NC BBQ society, I make professional grade and sized end grain butcher blocks, I don't have a lot of free time but I like to cook, I own some high end Japanese knives and enjoy how they perform and I am looking forward to reading more on this forum.

When you uploading to Photobucket I always use the Large IMG setting, 640 x 480 it is a nice size...

Once you start making your own barbecue, you'll enjoy it much more than anything in the restaurants. At least that's the way I am now.
 
First off welcome to SMF. You'll like it here cause there are abunch of good folks here that would just love to help you out with just about anythignto do with smoking. We really like to have newbies here because they can bring in a new propective to how things are done. There's nothing like a new set of eyes to give and new way to make things that little differant to make things alittle better. So I hope you know about the Qview here.

It's also free and it will give you the basics of smoking. So after all of that you just need to go grab something to smoke and if you have any question just post them here and we will answer it quickly so you don't have any mishaps with your smoke.
