Hello from Arkansas!

My name is Rachel, and I am a student at North Arkansas College. My classmate and I are working on a project that requires us to identify a target market for BBQ sauce users. Honestly neither of us has much experience with BBQ other than the fact that we LOVE to eat it. We are hoping that we can get some input from you guys on what the true BBQ Connoisseurs are like.

First off welcome to SMF. This will be a first for I'm sure anyone here. You want to suck our brains for infomation about bar-b-que and the sauces. Well since I'm the lucky first I use very little sauce and if I do it is homemade and I'm not giving it up an anyway I don't know whats in it cause I have to look in the refrig and see what I'm going to put in it. I used the rub and the fire to flavor my Q. But really if you want to learn alot more quicker go to the chat room connected and there you will find real live people not typed screens. I think you will have a hard time finding a general like for all bbq'ers.
In a forum like this, folks tastes will be more refined than the general masses and you will find folks coming up with all sorts of unique and wonderful flavors.

That being said, What you buy over the counter seems to be what the general public likes. Tomato based and sweet. Not my favorite, but in a pinch, it'll do.

And hey! welcome to SMF, hopefully you will find that your project projects you full force into bbq'in and you catch the bug! In which case, we'll look forward to the qview!

BBQ Sauces

our local newspapaer here in Baton rouge did a blind taste test of bbq sauces for their food section.
They used local sauces and nationally known sauces and out of 8 sauces
the one most of the tasters prefered was kraft original.
this was over sweet baby rays and pig stand sauces.

i'll try to help if I can,but different parts of the country have different bbq sauce taste. In oklahoma a tomato base,some sweet,some heat seems to be prefered. other parts of the country have mustard based, vinagar-pepper base,K.C. style,memphis style etc...

First off welcome to the SMF, Rachel. For my own taste I believe BBQ to be in the smoking or cooking process. Flavor added afterwards would just be one's personal preference. Myself I like very little sauce. Good luck with your project.

Even though I am a newbie here and believe I always will be.
Here is my take on sauce. You have either mustard, ketchup/tomato, and/or molasses based sauces that most of the people are familar with. I agree with most of the people in here, that I prefer the smoke taste in the meat you get and some rubs just compliment that. I have been known from time to time to put a splash of sauce on from time to time. The best sauce I had was at some little Mom/Pop place outside of Richmond VA, I think. It was Mango based I think. I thought it was too sweet at first taste, but there was nice surprise of heat to follow. I have been making my own sauce to try and follow that, I am close but mine is ketchup based with molasses and it is sweet and then tart with the red wine vinegar that I put in it.

Good luck.....I think with the information in here.....you should have no problem getting an A+
