....I am still around. Haven't been smoking much. Still don't have a job, been laid off since May 15th. Anyhow, I got some plum wood free. I cut down a pretty good sized plum tree. I got all the wood that I wanted out of it. I took all of the trunk and the bigger stuff.
I am going to grill some fish this weekend, and want to use some of the plum for a small smoke flavor to it. I am going to be doing Tilapia and Salmon. I am going thru a divorce, and the girl I am about to start dating has the favorite dish of grilled Tilapia. I don't like that, so I am doing Salmon for myself. Any tips, as I have never grilled fish. I will be using a 4-burner gas grill.

Three plates, first one Mix of Flour and some spices, second plate mix an egg with a fork, you only need one egg, third plate Panko bread crumbs. If your really cheap you can now fry and eat the egg.

Cover tapia in flour, shake it off, then dip in the eggs, then in the Panko bread crumbs. Fry in a good vegetable oil about 4 or 5 minutes a side depending on the thickness of the fish.

For spices in the flour mix I like some black pepper, powdered garlic and powdered onion , a bit of Mrs dash spice mix too.

Panko = Dried french bread with the crust removed then crush the bread in a processor.

If you're really Health consious you can bake it in the oven instead of frying.

Has to be grilled, not fried. She will not eat fried foods, except french fries. She hardly eats those. She is a healthy eater, works out; in general takes care of herself.

I'm glad your back but I'm too new to remeber you so hi chis. Sorry to hear of your delemma but it happens and some of us just do it more like me. I'm glad I pick fish better then wifes because I would be really really sick. But as far as your fish I personally season it with old bay rub not seasoning it's differant. It's a little spicy you you might need to know that. Then just throw them if the smoker for about (depending on the thickness) Tilapia tends to be thin smoke it for about and hour keep an eye on it. It will get almaost a leathery shine to it. then your done. I have used apple wood and alder is good too but plum should do just fine. Ok them happy smoking and welcome back.
