Hey everyone... I have been lurking around here for a little while now, and as a new smoker I just had to join! Tons of useful information here!! I will post more about myself in a roll call post a little bit later, but for now I have a question. I currently am the proud owner of a 4 burner Brinkmann gas grill and a ECB smoker. I really want to grill some chicken up tonight, and I would love to use the ecb as a charcoal grill because let's face it, there is just NO better taste, well IMO anways :) So does anyone do any grillin on the ecb here? it is the gourmet model if that matters. I was thinking about moving my charcoal pan (which has already been modded) to where the water pan would normally sit. Would this allow my cooking surface to get hot enough for grilling?? Thanks for the input everyone!
