Oh yeah, it was delicious. One of those dishes that you even enjoy eating cold. And the giardiniera, it was hard to let it rest for the full two days, if you notice there is a little less in the finished bowl than when I started it, so good for snacking.

Was already planning on doing up a batch of chipotle pastrami to bring you in a care package, not sure what else but you can be sure the pastrami will be included.

After my wife saw these picks we had to run to Costo and pick up a couple of chuck roasts. It looks like we are doing these Labor day weekend, thanks for the inspiration.

Oh My Gardinera !!


there once was a italian beef shop in flagstaff..
it was great
it changed owners.
then it was not so great!

BUT what I saw you make was great and now I add that to my list of things to try!!

Hope you and the wife like it (I'm sure you will) Visilor.
For the rub and seasoning to the beef broth the easiest thing to do is just use packets of dry Italian dressing mix, try to get some of the fats skimmed off the top since chuckies do have a tendency to be on the greasy side and the juice for dipping is key, it really puts it over the top.

I dropped by again to look at your feast and noticed my post never "took" or registered! Well, here I am posting again.....Bud you have an awesome cooking hand and mind. What a wonderful feast of a meat you've made and Gardineria is a side that melts my heart....you did it real well!
