Leftover Pulled Pork - quick ideas, please?

Hey all,

I'm heading out of the office in about 20 minutes...and I have a few lbs. of leftover PP at home in the fridge that I'm thinking about.

I've seen a few posts about PP Nachos and Enchiladas, but no recipes. Does anyone have a recipe they might share before I head home and experiment? The nachos sound very good, but I need a MAIN COURSE meal for 2 adults and 2 shorties. Enchiladas maybe?!?

was just thinking this over the other day!

you can do:
tamales
PP quesadilla
PP tacos
PP omelette
PP spaghetti
PP sloppy joes
PP chili
and so on......

She won't eat spaghetti or tacos, or many other things for that matter...but go figure, she likes quesadillas.

I like burritos. I use pulled pork, refried beans, cheddar cheese rolled up in a grilled tortilla. Top with more cheddar (small amount) and ladle on the green chile sauce. I get the Stokes green chile sauce with pork from Sam's Club.
 
I would use the left over pork for Memphis barbeque spaghetti. I have been contemplating making a massive batch of it, then putting it into vacuum sealed bags for later reheating.

Whatever I have reheated in these "boil in bags" has reheated perfectly. With a freezer full of Memphis barbeque spaghetti, what is the point of ever leaving the house?
 
Good point! I like the burritos idea too, but *sigh* once again - rest of the fam is too damn picky. I can't get away with refried beans - or probably the green sauce either...I gotta learn these folks how to eat!

That should be the first thing a guy thinks to ask a gal before tying the knot..."So, what won't you eat that I may want to fix us for dinner someday?"

The way it works around here is, I tell my wife "I'm having a burrito, what you gonna have?" Sometimes she'll make herself one without the sauce, but usually she will have something totally different. We're old so who cares?

My standby that everyone seems to love is PP Quesadillas. Trick is to get a nice-melty Mexican cheese (Oaxaca style) and let the folks pick flour or corn tortillas. The sides and fillers are your choice, but some guacamole and salsa are enough to make it a one plate feast everyone seems to enjoy.
 
Here's what we did with our a while back. When we lived in Houston there was a restaurant chain called Luther's BBQ. They had the most awesome stuffed baked potatoes. We have been craving for like 10 years and then it hit me to make my own with teh left ovcer pulled pork.

My version: (just like I remember)

1 large baked potato (slice open when hot, and fluff a bit)
stuff in this order

Butter, salt & pepper on potato flesh
Pulled pork (you can dice up if ya want)
Shredded cheese of choice (I used cheddar)
squirt of some BBQ sauce over meat
Sour cream
sprinkle of fresh diced chives
Bacon bits

I tell you, this is a meal in itself (stuff it full and the bigger the potato the bigger the meal)

We set it up like a potato bar at home and let folks put what they want on. Kids love doing it too.

Try it, you'll like it. :)

Stuff some pablanos with the pork and cheese. Toss on the grill till the peppers soften up and cook. no recipe just a easy quick thing. Toss on some picante sauce when done and eat up.

can you do sloppy joes and use the PP in those?

just warm the PP and use half the amount of manwich sauce
 
That's funny because I wa thinking the same thing just yesterday.

Except I'd probably skip the bacon with the PP and add some chopped broccoli instead. But that's the beauty of stuffed spuds - you can add what you like. (That's probably why you do the potato bar.)

BBQ Pizza - Use BBQ sauce instead of tomato sauce, PP, and cheese of choice.

Thanks again for all the recipes. You have to love this place. Didn't some one bring up the leftover pages here some we could have a good collection of recipes for leftovers. Hint Hint.
 
I decided to go with PP tacos...actually - over the weekend I did PP and a chuckie, so I had a mixture of pulled beef AND pulled pork to use as filling.

It was really good!

Browned onion, added the meats and the juice of 1 lime to the pan.

Heated the meat through, slapped some of the onion/beef/pork mixture on a warmed tortilla, added some pico de gallo, s. cream and a handful of monterrey jack cheese to the mix. Fold - eat - repeat
