Time to give the UDS my boy made for a 4-H project a try today. Couldn't get him to do it!!(Hanging with the buddies) Anyhow I got a couple salmon filets smoking as we speak and going well so far. The temps went up when I took a pic, which is what it sounds like happens. So here is the pic after a hour. I will be doing some ribs for supper tonight after the salmon is done, so more to come!!!
 
They're looking good. What did you do to them before you put them on the smoker? What wood and temp are you using?
 
Cool lookin' drum!!! NICE filets, too......

If you get a chance, post more pics of the drum so others (including me) can see it's configuration (intakes/vents, etc.)...look's like it's got cart handles (and possibly wheels) built in.

I'm not a drum-head myself, but may turn into one in the future, as everyone who has one gets really good results.

Yep, that happens.

It will usually come back down on its own though as long as the lid was not off too long.

To mnimize that, close down the intakes for a few minutes prior to lifting the lid and leave them closed for a few minutes after you put the lid back on. This cuts down on the temp splike caused from the extra shot of oxygen that the fire gets when lifting the lid.

This is the first time that it has been fired up, so I m learning it today. Anyway it was a 2 part project, one was the smoker itself and the other was a welding project, the cart it sits on. The cart is like a 2 wheel hand truck except it's bottom is about 2 foot square out of angle iron so the smoker fits inside the frame, and it has wheels with 1/2 inch pipe for the handles. I was running it at 225 then when I opened it up to take pictures it jumped up to 275, I closed things down but it hung around there until the fish was done. I added the ribs and now have it down to 210 so I cracked things open a bit more. Here are the pics of the finished salmon and the ribs getting started.
 
The salmon looks fabulous and now your doing ribs too. You are definetly tugging on my heart strings. If you throw on a fattie we will have to talk.

I read our post earlier on your son's UDS cart~ nicely done! That alone changed my mind from a definktely not-UDS person to a Wow, maybe I want one

I really enjoyed using the UDS today, and the meat on both smokes turned out very good. There was a bit of a learning curve and I am sure that there is more yet to learn with it.
Well here is a pic of what was left of the ribs. They were tasty for sure.
 
Great first burn! As Ddave said minimizing the air flow while you take off the lid helps keeping the temps from spiking. I always try to have my wife or kids help me if I have to lift the lid to cut down on the time it is off.

Lift.....do what you gotta do quick......put it back on!
