Saturday I had some friends and family over and felt confident enough to actually try smoking for other people. Usually it's just my wife and I but I wanted to try a gathering so I figured it was time to have at it.



I had two five lbs butts that I rubbed down the night before, wrapped in saran wrap, and let sit in the fridge.



I used Hickory woods chips that I soaked in Jack Daniels. Every now and then I'd give a squirt with some apple juice. I also tried to smoke a couple of potatoes for my wife and I. They turned out ok and tasted fine but I forgot to poke holes in the potatoes to let the smoke in, so while they were done, not much smoke flavor. I'll have to remember that for next time.

After they reached 160 internally I pulled them off, wrapped in foil with some vinegar and finished in the oven till they got to 200.



The first butt unwrapped. It fell open and the bone just slide right out.



Both butts shredded. I also used the finishing sauce recipe posted by SoFlaQuer and I was given rave reviews from everyone there. I didn't have any leftovers which also made me feel pretty good!

My wife told me she thought this time was even better than the last one I did and has even suggested I do another butt when her family comes over Labor Day weekend.

I just want to say thanks to everyone here for all the tips in the various threads. Everything I've gathered and put into use made for a very successful smoke!

Great job taking the leap cooking for more than your wife! I will be cooking for the whole family this weekend so I know how you must have felt!

2 1/2 - 3 hrs maybe?

However long it took it to get from 160 to 200.

I got the idea to vinegar in the foil from the buddy of mine who lives in TN who got me interested in smoking. I saw him do it and his pulled pork turned out great so I figured I'd make it part of my process, too.

I think he said it helps the fat render but I could be way off base.
 
Not sure if it's right to say from one man to another that they have a nice butt, but Damone, your BUTTS are nice.

Great job!! Makin' me ready to hot the smoker again. As I am typing this I eating the leftover pulled pork from Sunday. Mmmmmmmm

Now thats a mess of good looking pork damone. Glad everything came out alrite. I'm not quite sure and that vingar it doesn't like me at all.
 
I don't use alot of vinegar. Basically just a splash. I just do a count of "one onethousand" and then stop. So thet're not doing the backstroke in the foil or anything.

I do the same thing, fwiw. Often times my spritz or mop, if I do it, is straght cider vinegar. And straight cider vinegar in the foil as well, though after joining this site, I have started adding a little apple juice. But just a little.
