One of the things I like to do is to smoke cut up pork butts. The one place I get my pork has packages that they call "Rib meat". It's nothing more than cut up pork butts from what I can see. A lot of the fat has been trimmed off of it but all in all it's still a good smoke and I don't have to pull an all nighter for some good q. The other thing I like about using this meat is that I use it to experiment with different rubs and sauces when I get curious. This time around I just gave it my old stand by rub last night and then put it on the UDS around 9 this morning.
I'm spritzing with apple juice about once an hour.

Tossed a couple big potatoes on to let them take their time as well.
Something new I'm trying today is mixing up 2 boxes of Jiffy Cornbread Mix with one minced up jalapeno pepper, a cup of shredded sharp chedder cheese and a hand full of bacon crumbs. I've never really cooked cornbread on my UDS before, but have cooked it on other pits.

Still have a ways to go on the cook, but here's some pictures so far. I will update this thread later in the day if I add more pictures.
