Hey all!

Hope everyone had a good 4th!

So I figured I'd try something other than my usual ribs, chicken, ABTs. I picked up a 2.5lb center cut pork roast and some raw polish sausage at the local grocer.

I was hoping you guys can offer me some assistance with these items. I was planning on dry rubbing the pork roast and then letting the smoke do the rest.

Any recommendations, tips, etc?

You can look at the pages here with rub and sauces there are a bunch there or try jeffs I hear it's really good. As for as store bought I have found a rub by old bay thats really good and alittle spicey.
 
I have no set time for dinner, so I can experiment if I get some good ideas here. I wasn't planning on stuffing the roast with the sausage, however I'm not against that. Not sure where to start. By the way, the sausages are in their cases.

I'm definitely down with trying something crazy with this stuff I got.
 
you can cook it plain or stuff it. Either way it will be good. Since this is you first go at it maybe start plain. Next time stuff. Or vise versa. Cant wait to see the finished results.
 
If your talkin center cut I would keep it simple..... rub it down good with EVO and season with some onion powder.... garlic powder.... and black pepper. Make sure not to over cook it. Your talkin a really lean peice of meat. I wouldn't take it over 150 and let it rest covered. Let us know how it turns out.

Here is a thread on stuffing a loin. I love em this way. Once you start stuffin them it is really hard to cook one up without jammin somethin in it.

If your going to stuff it you would need to precook the sausage. Personally I wouldn't waste a sausage already in casing. If the roast in lean I would inject it but hey thats me or maybe even wrap in bacon. Smoke the sausage and have a snack while waiting on the roast.
 
yup rub and wrap in bacon-everything is better with bacon
