great job jerry, looks perfect to me... dont worry in the cooler i an sure if you would have restuck the probe after foiling and watched the temp you would have seen it rise to above 140 in the rest period. love them rib roasts!!! and you did a good one...points.gif

Now on the the part of not knowing the difference. Let me tell you that us vampires love that blood and she will know the difference. You are better off cooking yours to your liking in the au jus, it doesn't take that long in comparison to the unhappyness of your significant other.
