Well the menu for the night is:

Main Coarse: Pulled pork sandwiches, Chicken Quarters, Salmon

Sides: Watermelon, Pineapple, Coleslaw (country Coleslaw that irishthebear posted), Potato Salad (From teacup13)

Well the festivities are finished and everything turned out great. The food was fantastic. Everyone seemed to really enjoy it, even my sister who doesnt like smoked foods all that much. Most people thought the chicken was a bit spicy and I will admit it did have a kick to it, but it was still really good. As I said here is the rub i used on the chicken.

3/4 Cup Paprika (preferably Hungarian, although i can never remember the difference.)
1/4 Cup Black Pepper
1/4 Cup Celery Salt
1/4 Cup Sugar (i used brown sugar since people have said that sugar can burn)
2 tbsp Dry Mustard
2 tsp Cayenne
2 tbsp Lemon Zest

But thanks again for all the help and encouragment that you all have given. I definately wouldn't be this far this fast without your help. My brother was saying i need to do this for a living and open a restraunt. it may have been good but not quite there yet.
