Well, at 8:00 pm local time they hit 200 internal. I pulled them and let them rest. Two hours later I opened the foil... here they are:

The meat was falling apart, I had to use my B-B-Q spatula to lift the meat out of the foil and it still fell apart.

We sampled a small piece and it was GOOOOOOOOOOOOOOOOOOOOODDD PDT_Armataz_01_34.gif

Boy they look good. How is that bark? My bark is looking similar and I was wondering if it was going to be good. Took a long time but it looks like it was worth it!

I'm not a big bark man, so I usually peel it off.

This morning I made some ABT's... except I didn't wear gloves. I found out there is this stuff called capscium (Spelling?) that makes your hads feel like satan himself spit on them... Well I hope they taste good.. here they are. I still have to pull the pork. I hope my hands don't add a jalipino flavor to the meat...
