Hi everyone! I just got interested in smoking and have learned a lot from this site already. I was waiting on a Brinkmann All-In-One cooker so in the meantime I smoked 2 chickens on my Weber grill and they came out very well, but I think they could be better. Then the Brinkmann got here so I set it up and besides being a horrible POS the paint burned off the first smoke and nothing fits right! But even though all the coals burn way too hot on it I smoked pork ribs and adjusted the times for the 3-2-1 and they were the best ribs I and the wife ever had - with no sauce even. :)

Anyway I'm 53, live in Pahrump NV, and home on disability so I can put some time into doing this. I also make custom knives and have a site at www.DLKnives.com so check that out.

Welcome to the site Valkman.
I'm sure with a few tweaks and mods you will get your smoker operating just fine.
Glad your first few attempts were successful, it can only get better.
Nice site, I'll have to send the link to my Brother-in-law.
 
I forgot to add the All-In-One was free from my emplyer as a 30 year gift, but I don't like it much as a charcoal smoker. Maybe as a gas one it's better, but I'm aiming for a Traeger. If I can't get that anytime soon I'll whine my way into a WSM.

welcome to the forum. Good luck on the traeger, I would check the green mountain grill and the Louisiana grills too, you might find a better price. I am a pellet head and will gladly give you my 2cents on the pellet fired ones by pm if you want me to. welcome to the site and keep em smoking.

I have always wanted to make knives but never got around to setting up for it. Would love to incorporate my other hobbies of lapidary, woodworking, metal engraving and sand carving.

I figured that would be asked at some point! I have not made any kitchen style knives but now I may have to come up with a design for chopping and cutting meat!

Thanks! I did my third smoke today and my second time for spare ribs - they were excellent!
