OK everyone here's the low down on my first fatties.
I decided to to do two of them for the first time (why not) so the first one I used was Jimmy Dean's hot sausage stuffed with red onions, green peppers, and pepper jack cheese with a pepper bacon wrap.

Here's the mix before the wrap

With the pepper bacon weave

Here's the second one witch I did up with Sage sausage with red onions, green peppers, Feta cheese, Gorgonzola cheese and a apple wood smoked bacon wrap.

The apple bacon weave.

After about 20 min in the freezer to firm them up I but them on the smoker

Here's there they are on the grill after about 1 1/2 hr

Here's a side by side when done. The one on the left is the pepper bacon wrapped

OK what you all been waiting for the first up is the Sage with Feta and Gorgonzola then Pepper Jack and apple wood bacon

Oh I all most for got I also did up some Jalapenos stuffed with Pepper Jack cheese wrapped with bacon that I eat before I could get any pic and man were they good, very hot peppers as I did yard work I would eat one every time I came by the smoker....

As for the fatties both were exultant but the sage one won out with all that partake.

Both of those look awesome. Great job right outta the gate. I think I'd like the gorgonzola and feta combo. Sounds delicious.

You get points from me for your first fatties.
