I know it's still not saturday here yet but I finished my prep for the morning so I thought I'd start up the Qview thread.

3 racks of baby backs
  • one billbo rub
  • one mild rub
  • one Memphis rub
2 whole chickens
  • one mild rub stuffed with apples and crazines
  • one garlic rub stuffed with onion
1 fattie
  • sausage
  • green bell pepper
  • red bell pepper
  • cheese
  • mushrooms
  • bacon weave
Like I have posted before, this is my first big smoke ever. I've got all the meat wrapped up, new batteries for my thermometers, enough stubbs charcoal, a bucket of chopped up cherry tree chunks, apple juice in a spray bottle, and a brand new apron my fiancée made for me.

here's a pic of the meat.

going to be a good day hanging out with the smoker... some beers.. and a Padron anniversary 1964 that's been in my humidor for over 2 years :)

well you sure arent being half-assed! Some great looking food there, cant wait to see the 'after' pics!
Heres hoping everything comes out great!

I can feel it's gonna be a nice one Dan.
Beautiful job on the bacon weave.
Good luck and don't forget the batteries in the camera also. Love Stubb's...good choice.

Looks like a great start! Looking forward to the final pics.

Woo Hoo! Billbo rub! I hope you like it as much as I do. I can't wait for more pics! What kind of sauces, if any, are you going to use?

Aloha,

"Book Em Dano!" I don't know why I said that, but I'm looking forward to your pictures. Have fun today.

ok, after having a bit of a hard time getting up to temp. We're good and the ribs go on. (sorry about the glare, sun is bright at the moment)

it's a mod to the smoke stack so the smoke actually has to go under the grate before leaving the chamber. I found the idea on these boards :)

as requested here is me in my new apron. (it looks a little off because the heavy spray bottle is pulling it down on one side. Trust me when I say.. it's prefect and the picture does not do it justice.

have yet to fire it up... might save it for after and just go with a simple CAO Gold for now.
