Stuffed Pork Tenderloin

I suppose this is sacrilege around here but I had to use the oven because it was raining cats and dogs at the time. Next time it will hit the smoker........I promise! icon_smile.gif

Tenderloin butterflied

One package of frozen chopped spinach, drained.

Gorgonzola Cheese

Italian Sausage

I got lazy so I just stripped the top with bacon instead of wrapping it. Bamboo skewers to hold the ends closed and keep the bacon in place.

The finished product.

Yum! That looks delicious. Nice job on it. Sometimes you gotta do what you gotta do. icon_lol.gif I know around here lately the weather has not cooperated much either.
