i used to add too much charcoal when the temps went down below 220. not good
today, i learned some finer points on just adding a handful or two of the stuff as it is going down from about 230/235; i also learned that the little vent on the firebox door is your friend and really does a lot to help things go up or down. today the breeze is against me, so i am even cracking the door a bit now and then. the result is small changes that make a bigger, more-efficient difference
in any cse, temps are staying much more stable and i am using WAY less charcoal. TBS is perfect and the smells are incredible.
