What type of ribs do you buy?

Side ribs, baby back, back ribs. What is your favorite type and why.

Also any suggestions how how to pick out good ribs when they are all wrapped up.
 
i like spares, and BB ribs, I prefer the trimmed spares, making them K.C. spares.

I prefer to go to my butcher where the ribs are not packed in cryovac. If forced to buy the cryovac ribs I buy the ones that are not in the chemical solution, and ones that have a nice even layer of fat.
 
All I buy is spares, more meat an a better price. Ya just gotta look at em, enough fat but not to much, look at the sides ta see ifin there be good meat over the bones.

Try some different brands cause it does make a difference. I prefer Smithfields round here. Never had any luck at all with Tyson's, tough, not alotta meat an high priced.

Farmland seems ta be decent round here to. Guess the point is, ta just try some different ones an find which ya like best.

I trim some, just the strip from across the top a the ribs an anythin that be real thin along the sides. Smoke them up fer treats er ta add inta beans.

I buy spares & trim my own. I prefer fresh over previously frozen, but if they're on sale, I stock up. Trimmings for beans here also.
 
I like the precooked ribs packed with the sauce. This cookin stuff is for the birds.

Seriously, I prefer baby backs. More meat, less gristle. Pork all tha way.
 
I'll use spares or BBs. Usually spares trimmed St. Louis style. I just make sure they haven't been packed in solution. The ones in solution taste more like a ham. I like my ribs green pork.
 
For me, I'm smokin' spares. Lots of meat, better price, and eating the skirt that I trim off for a snack is just one little piece of heaven that I can't resist! I slap some rub on them, roll them up, and enjoy about half way through the smoke as an appetizer. Who could resist one of these! I don't care who you are...that is a delicacy right there!
 
I like country style ribs. More meat and I am definately a carnivore!!!!!

As a matter of fact I've got some rubbed down with a sweet rub and in the fridge right now just waitin ta be smoked.....I'll try and post pics later....

It's hard to say Ilike ribs of all shapes and sizes. It's a feeling I get when I in the meat section which ones? I like beef for the amount of meat and the flavor. your opions to me are greater with beef. I like pork ribs alittle less meat but a flavor of it's own. So the next time your meat section just grab a good handful of your leg and say
" self what do you feel like tonight"
 
Usually a rack of spares, which I trim Kansas City or St. Louis style. Occasionally, baby backs. I always try to buy toward the middle of the week, they generally have a managers special on the last of the prev. weekends.
 
I like spares just as much as I like the baby backs. I trim the spares and use trimmings for other dishes, although I really like how BBQ Engineer uses part of his trimmings for his snack.....
 
BB's exclusively. The wife and I just never have cared for spares, what can I say...different strokes for different folks.
 
I used to buy spares for the hubby and trim them up St. Louis style. He got the itch to try some baby back's, after seeing them at Sams, so we bought a package (3 slabs per pkg), and I smoked them up, cut them up, and he ate them up!!! The baby backs had more meat vs fat ratio on them and that was a bonus to him.
 
I'm with oneshot (sorry if I missed anyone else who said the same thing) - I really like country ribs a lot. Lots of meat, and I like all the fat. Plus, I just seem to be able to smoke 'em better. I dry out baby backs a lot of the time.
 
The only reson i do spares is for the dots, they like the riblettes and trim meat as snacks. I will only do BB for comps, and prefer them to eat.
