Did the chicken wrapped with bacon and andouille the other week. Had some boneless sirloin pork chops on sale. Threw some head country rub on them. Pounded them out, laid some pepper jack cheese down, some andouille sausage, rolled it, wrapped it in bacon. Been wanting some black bean salsa also, so whipped up a batch. Enjoy

Looks good Cajun....all of that looks good.I am using black beans(turtle) i grew in a caserole tonite, but that is on to do list.

Awesome looking black bean salsa, and your rolls....well, can't say enough. Excellent! Wow...did you invent these, cause they're great, and sure a lot of folks want to try that. Look outstanding!

Thanks Rivet. I think someone esle did something like it on here and decided to go with it. I think it was Werdwolf. Wife said this is one of my best smokes yet. Beat the chicken ones I did hands down she said.
 
Great looking smoke. I love audouille sausage in anything but that really looks like it would taste fabulous. Oh yea love that black bean salsa too
 
Gracias Balli...Here is the Black Bean Salsa if anyone wants it.

Black Bean Salsa
1 Can (15 oz) black beans, rinsed, drained
1 Can (10 oz) Rotel Diced Tomatoes and Green Chiles, drained'
1/2 Cup whole kernel corn
1/4 Cup Finely Chopped Red Onion
1/4 Cup Finely Chopped Cilantro
1 TBSP lime juice
1/4 TSP Cumin

Recipe didn't call for salt, but I added it to taste
 
Thanks for the points and comments. It is good. A lot of times I don't have time to do a brisket or butt so I have to opt for something good and doesn't take 10 hours...
