Thanks for the info man. I don't have any adjustable intakes on my Brinkmann but I'm thinking about adding some. I'm just trying to get a feel for how everyone starts so that I can adjust my own ways too, but my adjustment will come from the fire I think. I may play around with it some more and just buy a Weber for myself for my birthday next month instead!

Although we do have lots of empty barrels here at work...

The drums are excellent. You can vary your temps easily and then hold them for long perids of time. They also perform in all weather conditions. I would reccomend one to anyone thinking of a smoker.

I have been meaning to do that along with my rub recipe. The problem is I never measure. I will have to write it down next time. Thanks for the reminder Dude! I'll have to do that soon for you guys.

PM me with the basics if you can. I showed this chicken and teacup's "BLT Pasta Salad" to my wife. Her response was "YUMMMMMM, THAT LOOKS GOOOOOD". Do I have a convert on my hands? I'm thinking maybe. We've got some friends coming over on Saturday, and if I've got the time to prep everything, this is going to be our dinner.
