When they talk about cider vinegar for a finishing sauce are they using apple cider vinegar?? Thats all I can find in our local stores I sure hope it works.. I Have they cajun seasoning, the coarse black pepper, crushed red pepper and the brown sugar and the pork going on the smoker in a bit I sure don't want to ruin it with the wrong vinegar...

I spritz my butts and pork ribs with a 50-50 mix of apple cider vinegar and apple juice. Oh and a wee splash of Makers Mark PDT_Armataz_01_22.gif

RIVET'S finishing sauce is the est i've ever had - here's the recipe:

Finishing Sauce:
3 Cups Apple Cider Vinegar
1 Bottle (12 oz) Killians Irish Red or Guiness Beer
1 TBSP Salt
2 TBSP Red Pepper Flakes
1 TSP Ground Black Pepper
1/4 Cup Dark Brown Sugar

Mix all sauce ingredients in saucepan, bring to boil. Reduce heat to simmer and simmer 30 minutes, uncovered.

Once pork is pulled and chopped, mix in large bowl with sauce. Serve on buns with coleslaw.

i don't have killians of guinness, so i use "regular" beer with great results. once, when i had no ber, i used apple juice and it was also very good, but lacking in a little depth and body.

Make sure you check the bottle before you buy it. There is apple cider vinegar and there is apple cider flavored vinegar. There is a BIG difference taste.
