2lb brisket quicky

I know that a 2lb trimmed down supermarket brisket is a bad idea, but I found one in the freezer on friday. I have no idea where it came from, but I'm craving some Q and dont have time for a full blown smoke.

I gave it a good rub with cayenne, paprika, garlic and onion powders and a bit of cumin. No salt in the rub, this has very little fat and I dont want to dry it out. I'll salt at the end if need be.

Due to the size and time issues I decided against firing up the GOSM, and instead elected to try this on the grill.

I got the grill really hot and gave a quick sear on both sides and then moved it off to the side and turned that burner off. I'm going to try indirect on the gas grill by using only one burner.

Over the burner that is going I placed a foil wrapped packet of mesquite and hickory.

I know I'm committing many cardinal BBQ sins here, but I'm seriously craving some Q.

I'm doing the foil packet for smoke

I just flipped it after an hour and a half and I'm keeping the top side layered in bacon while cooking.

just foiled the brisket and snacked on some of the bacon... its looking good!

I've done slow indirect smokes with my gasser alot. Comes out pretty good most of the time.

It came out ok. Just a touch too dry for my tastes. I'll get the post pic off my phone and put it up tomorrow. I keep forgetting to do that...
