First smoke ever.

Looks like a great start on your first smoke! I have to plug Dutch's wicked beans....On your next smoke you HAVE to try them. I've been smoking for about a year now and just tried the wicked beans on my last smoke a couple of weeks back. The beans were almost better than the brisket

That sounds amazing. I would have done that, BUT, I kinda ran out of room on my smoker :P I've been lurking on the forum for a little while, and every time his recipe comes up, it's nothing but rave reviews.

EDIT: I hit the real plateau at 150. It's sitting pretty there. I noticed the temp was a little down on the smoker, so I just opened things up a little more and added a little more fuel. Back up to temp.
 
me too. Unfortunately, my temps are dropping. I've got too much ash and not getting enough airflow. GRRRR.....
 
Well, 13 hrs in, and still at the plateau at 153ish. It's been there for the last 4 hours. Is this normal? Also, just about out of hickory. I've got three sticks left. Switching to Oak.
 
well, looks like I was a little closer than I thought. I'm using two different thermometers, and one was a little off... I think. My pyrex reads at 154, which is good, considering that it's in the big one. The new one, which I got at a restaurant supply store is reading at 164. I was curious, swapped probes, and suddenly my pyrex is reading the other one at 201. Which should I believe? grrr....
 
Check the bone in the one reading 201. If it is in that internal temp range the bone should be fallin out loose. Another good way to tell when they are done without the therm. If it is stll at 180 or under... that bone will be tight.
 
I'm gonna have to get me one of those! I've used the pyrex one in boiling water, so I'm pretty confident with it. Gonna check the bone, and come back with q-view. Back in a few

dang near twisted the bone out of two of them when my pyrex started beeping. Swapped it to the next smallest one, and while I was wrapping it up, started beeping again. The other two have a little ways to go temp wise, but I'm just gonna trust my pyrex from here on out.

Thanks! I got the last one off somewhere around midnight last night. I realized that my grill was pretty uneven. As soon as I can FIND some thermometers, I'll put some more of those in... I'm also gonna buy some of those taylor thermometers from amazon. Right now, they're buy 3 get 1 free. My wife is a little perturbed that I used our pyrex for that. :P
 
Nice job Mars, looks like a very successful first smoke in spite of the thermo issues. Don't know how you can possibly wait until Wednesday to dig into one of those butts. They look mighty tasty!

Thanks. Unfortunately, I had to do the final finishing in the oven. It was getting really dark, and I was getting really tired and just wanted to go watch some TV.
