My name is James. (deleted) Stole a smoker from a friend and decided to try it out. AWESOME! I use a Brinkman Smoke'N'Pit. I do have one question!!!!!! Do I put my water pan over the fire or under the meat????? I have been putting my meat on the far end of the smoker and my pan under the meat, but it doesn't seem to boil and steam so good.

Welcome to SMF. Glad you joined us.

You want the water pan over the source of heat. It is used to add moisture to the chamber. If you want to catch the drippings, then use another pan for under the meat.

Welcome to the SMF! Looking forward to some of your smokes and recipes. I grew up in eastern NC (Sanford/Raleigh area) and love the Q from that area. I later moved to Charlotte and then on down to the Atlanta area. I was OK with the Charlotte Q but when I arrived in Atlanta, I found the tomato based sauce. It was so very different from anything I had before. I finally grew to understand the differences in the regions and I enjoy all of them. But I have to admit, when I really want to go back to "real BBQ," I go back to the venigar based NC BBQ. I guess it's what you grew up on. Anyway, welcome aboard and we look forward to your posts and pictures.
