Sumo asked me to post this recipe for Baked Beans.


Ingredients:

Gallon can of cheap baked beans Drained, save liquid
1 lg Onion chopped
½ Bell pepper chopped
2 teaspoons finely chopped Garlic
1 pk thin sliced bacon
Velveeta cheese 1 large handful chopped + to cover

To Taste
Mustard
Soy sauce
Brown sugar/molasses/ Steen’s Cane Syrup
Salt
Pepper
BBQ sauce

Fry ½ pack of bacon till crisp
Remove bacon from pan, adjust amount of bacon grease, add onions sauté till clear
Add bell pepper and cook till onions are brown
Add garlic and cook till bell pepper is soft, onions are dark brown
You want your onions to be almost burned to get all the sweetness out of them you can.

In a baking dish large enough to hold the beans add the drained beans and sautéed vegetables. Stir
Add the cubed Velveeta, crumbled cooked bacon stir
I like the taste of Steen’s but it can be a bit overpowering so I suggest you add amounts of brown sugar, Steen’s and or molasses to desired sweetness.

Add mustard, salt, pepper, BBQ sauce and soy sauce to taste stir
Adjust mixture with saved bean juice. It should have some liquid but not be floating.

Lay remaining bacon across top of mixture, cover, and bake in slow oven about an hour or so until bacon is cooked but not crisp and beans are firming. It wouldn’t hurt to put the beans in your smoker.

Add thinly sliced Velveeta to cover the beans and bacon. Bake in a moderate oven until cheese is melted and brown.

I make the mistake all the time of overcooking the beans and they get dried out so kind of watch them when in the oven/smoker and adjust liquid as needed.
