It's been WAY too long since my last smoke...no frozen smoked vittles left either

! I've been planning and prepping equipment for a big smoke in May, and haven't had a break in the weather since a few weeks before the blizzard hit last month. The spring weather here has been relentless...snow, melt, mud...snow, melt, mud.........

My days off of work have been just plain nasty

. Got another 4" of wet heavy snow lastnight and this morning...but, finally, a window has opened for in the morning...if only for a day...only a 20% chance of rain (this time) and a high temp of 53*

I had a couple slabs of BBs and a few packs of CS ribs just begging to be tossed onto my SNP since I did my last mods for the May burn...IT'S TIME AT LAST!!!!!!!!!

I have these thawing for a rub in the morning, and a toss on the SNP with Mesquite (sorry, pics look a bit frosty, must be the -20* freezer temp):


The BBs...btw, this was not the price paid, had a rain check for $1.99/lb.




And the CS ribs...have another pack still in the Q-freeze:

I will continue this in the mornining, and, will still have a smile on my face!

I can't remember the last time I smoked BBs, and I'm pretty sure I've never smoked CS (only grilled), so this is gonna be a treat!!!!

Congrats for finally being able to smoke again Eric!
It's hard during the winter and rainy days when you really need some of that fine smoke.
"Try it, you'll like it" they say, and soon as you get that first bite you're hooked!
Can't wait for the updates and finale.
Rubbing with anything special, I mean it's all special, but you know what I mean.
 
Thanks, Fire it up. Yea, it bites when you keep getting kicked in the pants...been doing alot of weather dodging lately, but I'm gonna go for it today.


Today, for a rub, I thought I'd experiment with something a little different than what I've blended up in the past:

I have the CS rubbed and resting now on the tray in the cold SNP. They weren't completely thawed out, just enought to seperate them.


The rub is pretty simple:

2 Tbls - Kosher Salt

1 Tbls - Black Pepper, medium grind

1 Tsp (rounded) - Curry Powder

4 Tbls (pre-grind measured) - Dried Green Bell Pepper, course grind

1 Tsp - Cayenne

2 Tbls (heaping) - Dark Brown Sugar


CS Ribs, seperated and getting a few sprinkles, the rub is sticking nicely due to the moisture from thawing:




Wether is in the low 40's and light scattered showers. I have a poly tarp stretched over my SNP and part of my soon-to-be outdoor kitchen, so it should be a good smokin' day. I'll be dry anyway, that's a good start.

I'll be back with prep/rub on the BBs in a bit, then, they'll all be off to the thin blue, and I'll see just how my latest mods will work out with meat on the grates.

BBs are now in the smoke with the CS. Started smoking the CS first, while I started lining out temps, and got the rub on the BBs then. I'm smokin' now!

BBs rinsed and dried off, ready for a few shakes of rub:


Decided to use up the remaining rub that I blended up today for the CS:


Here's what I decided to try today for the first time for the BBs...I'll need them in May for a big smoke of spares (8 slabs)...want to see if the slabs will cook evenly or not...may need to flip them over (top/bottom) after a couple of hours:


BBs on a double-wide rack...I wanted to maintain full-length slabs:




And I'm back outside to check water levels and smoke...back later!

Wife wants to tap into one of the 7lb-5oz can of beans we purchased for the 40 peeps feed in May to make a big batch of Dutch's recipe...gonna be a great smoke! Gotta go get a foil steam pan and start chopping smoked beans ingredients...

Back later, gotta check my water pot, smoke and temps.

The SNP is loaded for the last run of the day, with Dutch's Beans...had to move some CS ribs back to the lower rack to fit the foil pans...the BBs have a lot of shrinkage already, so the pull back is not far off:


Aaaaaaaah, man, it feels great to have a good smoke goin' again!

Finale will follow in a couple hours...now I can relax and have a couple beers while I wait for the pull-back on the BBs...doing a 6-0-0 with wet smoke, we'll see how that comes out...wet smoking has been good to me in years gone by.

Thanks for peekin'...wish you coulda enjoyed it as much as we did. The experience of pulling off another smoke was all I needed, the good food was just a side benefit!

Got my fix for the addiction...I'll be OK now, at least for another day or two! LOL!!!!!!
