Easter Beef & Chicken Fajita Tacos, Shrimp, And Beans w/QVIEW

Y'all are probably tired of seeing Easter QVIEWS but here goes.....

To be smoked was:
  • 4 bone-in chicken breasts (for chicken fajitas).
  • Approx 4# of beef skirt steak (for beef fajitas).
  • 3# of large shrimp.
  • 3# pot of pinto beans (didn't get a pic - sorry)
  • Lots of tortillas for the tacos.

















My niece made the bunny cake and no, I didn't bake it in the smoker

. The fajitas were marinated for a couple of hours; smoked, then seared a couple of minutes each side. The shrimp were done in my CI skillet with a stick of butter, garlic, and some cajun seasoning. Everything turned out real tender and flavorful. Sorry I didn't get a chance to take pics of the prepared tacos with the pico de gallo, guacamole, salsa, etc...

I don't think I ever get tired of seeing Qview like that. Nice job, it looked like an awesome feast!

Thanks Dawn. The chicken was simply mayo and store bought cajun seasoning. The beef was marinated with a mixture of beer, worcesteshire sauce, soy sauce, granulated onion and garlic, sea salt, and CBP. As soon as the beef hit the smoker, it got treated with a second round of sea salt and powdered black pepper. The shrimp were done with a stick of butter, garlic, and store bought cajun seasoning.

-Tanker, I thought your food looked great enough until I got to your shrimpers....man-o-man! Those looked beyond good. Geat job on that hunger-pang-starting-qvue, and no, can't get tired of it.
