1st time spare ribs

I bought a rack of pork spare ribs on last week. If I can figure out the q-view then I'll post my results next time.

After thawing out the ribs, I rubbed half with Tony Chacheres and the other half with some Saltgrass Seven seasoning. I used the 2-2-1 method while smoking at a temp of 250 deg with hickory chunks. After 2hrs I wrapped them in foil and added Sweet Baby Rays Honey BBQ sauce. After the 5hrs were up I wanted to foil them and put them in a cooler for a while but due to time constraints I didn't have time. They turned out really good. I didn't think they would be real tender since I was running out of time but they were w/out falling off the bone. I will definetly do ribs again. Thanks to everyone who posted times, temps and ways to smoke 'em.

sounds like you had some good ribs. I have never rested my ribs after the last hour and they are good. Heres a link on how to post pictures(qview)

Sounds like great ribs. I agree with Brian, I don't have time to rest the ribs. I'm too busy eating!icon_mrgreen.gif

Thankfully, ribs are one of the things you don't have to wrap and rest. Thank goodness for that, because I'm getting to old to fight everyone off when the ribs are done.

You will find ribs don't really need to rest. They are great straight out of the smoker. I'm lucky if I make it in the door with the platter of them before the vultures swoop down on them. icon_mrgreen.gif

No Q-View didn't happen. Get that camera fixed.

The ribs around here don't last long enough to rest. Sounds like your ribs turned out great.

Congrats on your first rack of spares. Sounds like you did it right. The 2-2-1 method is widely used, and you made the right choice of tweaking the 3-2-1 method to fit your Q. It's all good my friend.
