Another beautiful Saturday Southwest of Chicago, low 60's and sunny. Did some babybacks, polish, and ABT's. All turned out good.

no better way to spend a Saturday, tequila, beer, sun, smokin, and White Sox baseball on the radio.

I am getting alot of "practice" in this month for a BYOS(bring your own smoker) pot luck I am hosting in May. For that event I am doing 6-7 slabs of babybacks, as well as 5-6 lbs of either hot links, or boudin. I have 5 other guys with smokers coming out to feed 50 or so people.

you got that right, nothing better than a comfortable seat on the deck next to the smoker, cold beverage in hand watching the deer running through my property.

thanks, I went lighter on the rub, and really enjoyed this batch.

The weather was odd, it was mid 60's out where I live s.w. of Chicago, and 31 degrees down by the lakefront.

This weekend babybacks again, and more sausage I have to try out my source for fresh boudin, and hot links.

here are a couple of pics from my previous Saturdays ribs, and brats. The ribs I used more rub, with yellow mustard to make more of a bark. Still a decent smoke ring on both.

Ill be back at it this Saturday, maybe some wild boar or goat, boudin, or some alligator sausage, I am going to wild game store in Homer glen this afternoon to see what they have. If not sausage, ribs, and ABT's again.
 
Excellent feast, ~sox....those ABT's looked plump and ready. Nice to see polish sausage qvue once in a while, it's some really tasty stuff that takes to smoke!

I am back from my visit to the wild game meat shop. picked up a rack of Wild Boar St. Louis ribs, a rack of Wild Boar spare ribs, and 1# of alligator boudin.

I cant wait for Saturday to smoke them, Ill make another batch of ABT's as well.

I am really enjoying smoking sausage so far this year, I think the alligator boudin this weekend will really get me hooked(if im not allready). I hope I made the right choice they had crawfish boudin as well.

It is also my first try @ wild boar ribs, I have read up on how to smoke them, and I think they will be good as well.
