Some ribs and others with Qview

Was thinking of a brisket this weekend, but couldn't find one I liked. So I opted for ribs since they were on sale. Figured if I had the smoker going I might as well do something else, so I picked up a 10 pound bag of chicken hindquarters and put some of those in too.

I want to thank The Dude for his chicken brine recipe. I saw it in the poultry forum and thought I'd give it a try. They sure turned out good.

Ribs with the dry rub.

Chicken hindquarters out of the brine and just a little dry rub on them.

Went with the 2-2-1 method for the ribs. Put the ribs and chicken in at the same time, and the chicken was done when it was time to move the ribs to the foil pan.

And yes there were 6 hindquarters in the first picture and only 5 in the second. icon_mrgreen.gif

Ribs were about falling apart by the time they were ready to come out. I was just able to get some BQ sauce on one side because I didn't think I could get them turned over without them falling apart.

Good looking ribs and chicken!! I'm sure the reason there were only 5 leg quarters left was one had to be tested for quality!!!

That's the story I was going with.

I want to thank everyone for all the good information they share. I've smoked ribs before and even done them on my grill. But coming here and reading about the 2-2-1 method made a big difference. Had to be the best ribs I've done up to this point. Not too dry, and just about falling apart but not quite.
