Well, I've been extremely busy with my wedding in Feburary and a baby due in June. So I haven't really smoked anything lately. I figured it was time since I had off yesterday (Friday), what better than an overnighter. This is about my 100th butt smoke and only my 3rd chuckie smoke. For rub I used the midnight brisket rub for the chuckies off of tvwbb. And a general pork rub for the butts (kosher salt, brown sugar, sugar in the raw, cayanne, chipotle, paprika, black pepper, granulated garlic).

Lit my 15 coals at 10pm. They ashed over by 1030pm and I started the minion. 2 chunks of hickory and 1 chunk of cherry. Meat on at 11pm. Chuckies came off at 7am and foiled into the oven. The butts stalled at 155 for a couple hours, after 165 I foiled with whiskey and grape juice until 200. They finally came off at 1pm, just as my full ring of charcoal was about cashed. It was a good smoke. The best chuckies I've made yet. Enjoy the Q-View!!! Happy Easter!!!

Nice job. Those WSM are butt machines-i get more consistent results then using my electric oven-when not smoking. Thanks for sharing Q-view.

I agree! The WSM is a close to set it and forget it as it gets. I can have a lid temp of 250, grate of 237 ALL night long. I got up at 3am to check temps and it was still at 250/237. Got up a 7am and it was only down to 246/233. It's really a GREAT machine for overnighters. And a ring of charcoal can go 13+ hours for me.
