Did 2 whole chickens for mothers day as my first smoke of the season. I was a little delayed in getting my smoker out due to work and travel. Due to the health concerns of my girls family, I did them skinless as I have done before, just brined and rubbed and smoked with a beer can in the butt. Doing chicken skinless has actually come out juicier than with skin, and both birds disappeared in no time.
