After 2 hours at 225 the temp is 150 (small roast)

Going to pull at 165 and foil until 195. Cant wait to stick a fork in it!

Hopefully with a belly full of tasty treats the wife will let me sleep in the same room. BTW she still doesn't know about the MES yet. Good thing about healthcare workers working 12 hour shifts. Plenty of time to get the units together, seasoned, and cooking dinner

Your right about that one mine does 12 hour shifts in the ED an I can get in plenty of trouble from the time she goes in and gets back home

If you really start catching it you can always pull up the pics of the Lang I surprised my wife with well on second thought maybe you should save that surprise for her when you do it

That may be another thing that saves me. She has seen the smoker I really wanted. It was similar to the Lang, but was double axle and about 30% larger smoker. It also had two propane stove burners, and a gas grill. The whole thing was making me drool. she had to drag me away as I was pulling out the Credit Card

Ok I got to say I AM HOOKED on Chuckies. Great flavor. I have to say I might be more partial to these than Briskets. Here is the finished product. and for those who were folowing the other thread, my wife is going to spare my life after this dinner..

I agree! My chuckies seem to be more flavorful than most of the briskets I have done. Must be the higher fat content. Looks deeelish!!
